Entomophagy (or eating insects) is considered an alternative food consumption, which allows for sustainable impact on the economy, environment, health and social well-being. The purpose of this SNF-funded project is to encourage the promotion of insect-based food consumption in Western food cultures. Indeed, given the significant and steady increase in insect consumption, it becomes crucially important to study how best to promote insect-based foods in Western societies (in Europe, and especially Switzerland, and the United States), which to date have been reluctant to adopt and use this alternative form of food consumption.
